Heim Barbecue — The Original Home of Bacon Burnt Ends, Where Travis and Emma Heim Turned a Backyard Obsession into Fort Worth’s Most Influential Barbecue Story on White Settlement Road

There is a short list of Fort Worth restaurants that have genuinely changed the culinary landscape of Texas — and Heim Barbecue is firmly on it. The story begins in 2013, when Travis Heim drove to Marshall, Texas, in a U-Haul to retrieve a hand-built smoker from his late uncle Roger, dragged it back to Fort Worth full of wasp nests, and started hosting underground backyard BBQ parties with his wife Emma under the name T&E MEATclub. A Kickstarter campaign raised $15,000 in 30 days when they launched their food trailer in 2015 — and that same year, Travis posted the first photo of his bacon burnt ends on Instagram, an invention that has since traveled the world. Today pitmasters in Oslo, Prague, Sydney, and New Zealand are serving their own versions, and when Kroger launched a packaged pork belly product, the inspiration was unmistakable. Texas Monthly credited Heim as the originator, and the label “Original Home of Bacon Burnt Ends” is now the restaurant’s official calling card — rightfully earned and impossible to dispute. After the food trailer lines stretched two to three hours daily, Travis and Emma opened their first brick-and-mortar on Magnolia Ave. in August 2016, then expanded to the current Fort Worth flagship in 2019.

The Fort Worth River location at 5333 White Settlement Rd. is a 7,500-square-foot renovated VFW hall with a covered patio, outdoor beer garden, large deck overlooking the river, and a full bar serving 24 draft beers, craft cocktails, rotating frozen drinks, and an extensive wine list. The menu is a farm-to-smoker celebration of low-and-slow post oak fire cooking: hand-cut brisket (lean or fatty), pork ribs, beef short ribs, jalapeño cheddar sausage, pulled pork, turkey breast, and the legendary bacon burnt ends — sweet, smoky, caramelized cubes of smoked pork belly that reviewers routinely call the best thing they’ve ever eaten. Sides are entirely scratch-made, with the green chile mac and cheese, potato salad, and banana pudding earning nearly as many fans as the meats themselves. The HEIMburger menu, onion rings, and homemade seasonal cobblers and hand pies round out an experience that feels as complete as any full-service restaurant, delivered with the casual efficiency of a classic Texas barbecue counter.

Heim Barbecue on the River is located at 5333 White Settlement Rd., Fort Worth, TX 76114, and is open seven days a week, Sunday through Thursday from 11am to 9pm and Friday and Saturday from 11am to 10pm. Happy hour runs Monday through Friday from 2 to 6pm. Full bar, catering, private dining, and nationwide shipping via Goldbelly are all available. With a Dallas location on Mockingbird Lane and a new Weatherford outpost now open, Heim’s reach continues to grow — but Fort Worth will always be where it started. Be prepared for extremely small servings. $5 side salad super small. $4.25 onions rings you get 3 onion rings. No sauce provided. Business provide better serving sizes or buh bye. I can make this food at home. Get real do you want me to come back and spend more money? I’m not coming back after how small the servings are. Pretty sure that’s a health code violation to leave the bartenders purse on the drink making counter. Dissatisfied with the sides of this bbq joint. Food was nothing special could make what I got from home and made even better at my house. There was not a dedicated bar tender. Had to wait a while was just like sitting at a table. If you are going to have a dedicated bar, please have a dedicated bar tender otherwise what’s the point?

This is a 3 star BBQ joint if I’ve ever seen one. The brisket is ok. I would be happy with it if I smoked it but it lacks the quality of the Texas standard. Atmosphere is somewhat sterile. It’s an NFL Sunday and there’s ladies NCAAB and the Lane Kiffin documentary in the TVs. The worst part is the cost… what’s pictured was $25.95 before the tip. The fries alone (small) were $5.95. That’s almost criminal. I live within walking distance and wish this place was good enough to be one of our regular spots.

Docked a star for food only because they were out of most of the meats. Great sides and service, highly recommend! Amazing onion rings. Potato salad is a little dry for my taste, okra is outstanding.

Fantastic place to eat. Brisket was very tender and turkey tasted great.
The staff was very helpful. My wife wanted to substitute ribs for turkey and they were very accommodating.
The manager was walking around asking people how their food was. He even chipped in delivering food. Completely different from Risckies where the managers just stood around. Not asking about food or service. I will go back to Heims again. Pleasant folks and great food.

Yeah all this looks really really good but the only meat that didn't need to be drenched in BBQ sauce was the ribs. The brisket and the chicken was severely lacking flavor. What do I mean? Brisket tasted like meat but with no salt or pepper. the chicken tasted like it was very lightly seasoned on the skin but somebody didn't actually season the meat. Beans were ok but I ended up squirting BBQ sauce in them to make them taste better.
I've had better BBQ at buccees if Imma be honest with you. Ribs were good though

Don't waste your hard earned money unless you just want to do so. My first time ever having mac/cheese without the cheese sauce, it was like eating unsalted potato chips. Their beverage machine didn't have water, they also needed to check the syrup level in the beverage machine. As the soda's tasted really flat, mind you this takes less than 2 minutes to do. All you do is disconnect one hose from the old box and connect the hose to the new box; Stevie Wonder could do this!

Their Bacon Burnt Ends were harder than a jolly rancher, however their brisket was really good; so that had me perplexed. When visiting the restroom, be prepared, that you'll be sharing a sink and need to hurry up and get out of the way for the next person. Save your time and go somewhere else, unless you just have to say you ate here. I should of just went to 225 BBQ in Arlington instead, but here we are.

I had a great experience here! The brisket was tender and moist, and the sausage was easily the best I’ve had anywhere in the DFW area. I also really enjoyed the ribs — they had a hint of sweetness that I really liked. The potato salad was absolutely delicious, and while the mac and cheese could have been a little creamier, it was still flavorful and satisfying.

The vibe was very friendly and welcoming, making it a great spot to bring the family. Plus, you get to enjoy the downtown atmosphere while you’re there. I’ll definitely be coming back!

The overall dining experience was mixed. While the food was decent, the portion sizes did not seem to align with the pricing, we felt as though we paid $30 for what resembled an appetizer. Additionally, the peach cobbler was disappointing, with a taste and texture that suggested it may have come from a pre-packaged mix. However, the service was outstanding. Matheus was courteous, knowledgeable, and attentive, and his excellent service was a highlight of our visit.

First off, anyone scoring this place below a 4, especially those who gave it 1-2 stars, probably scores everything bad. Second point, I read most of the lower scores and none of them got the Bacon Burnt Ends. That’s about like going to Burger King and ordering a salad.

With all that’s said, this place is legit. The Candied Bacon Burnt Ends are amazing. I’ve never had anything like it. I’m..... speechless.

And not to discount the brisket, it was just as good. Moist, tender, flavorful.

If I had to complain, the Mac and cheese wasn’t that Mac and cheesy. But that’s not dropping the ratings down. The star of the show was amazing. And I liked the banana pudding.

If you go to this place and don’t get the burnt ends, shame on you. Don’t even bother reviewing.

Cool vibes, great location, clean, friendly staff, quick service, good bread and pickle options.

Heard many good things about Heim BBQ over the years. I didn’t enjoy my overall meal. I purchased the 3 meats that include 2 sides for $29.99. Texas-style sausage, twice baked potato salad, and BBQ sauce were good. Green chili mac ‘n’ cheese wasn’t creamy or cheesy. It was DRY! I was given mac ‘n’ cheese instead of the green chili mac ‘n’ cheese I ordered. Pork ribs were mid with a smokey pepper flavor. Pissed, I purchased two of Robin’s famous brownies. The one I opened was horrible! Crossing my fingers the other brownie tastes better, but I doubt it. Happy to see a self-serve table with bread, onions, pickles, and jalapeños. The staff were great, and I enjoyed the ambiance. The prices are better than most BBQ restaurants. Unfortunately, I won’t return. There are too many good BBQ spots in the area.
