Wishbone & Flynt — Fort Worth’s Award-Winning Near Southside Gathering Place, Where Chef Jorge Olvera’s Inspired Comfort Food, a Hidden Speakeasy Bar, and the Warmest Neighborhood Energy on Bryan Avenue Make Every Visit Unforgettable
From the moment it opened on the Near Southside, Wishbone & Flynt at 334 Bryan Ave. announced itself as something special — and the accolades followed immediately. Fort Worth Magazine named it Best New Restaurant and Best Tapas/Shareable Plates. Fort Worth Weekly’s Critic’s Choice awarded it Best Appetizers, Best Atmosphere, and Best Presentation. Readers voted it Best New Restaurant. The 2020 CultureMap Tastemaker Awards named it one of the Best New Restaurants in the city. And now the restaurant has earned national television attention, appearing on the USA Network’s series “Everything on the Menu starring Braun Strowman,” where the former WWE star ate every dish on the menu and uncovered the stories behind the kitchen — a fitting tribute to a restaurant that has always been about connection as much as cuisine. The vision from day one has been simple and Fort Worth to its core: a gathering place where great food and drink are secondary only to the people you share them with, a friendly next-door neighbor that just happens to serve extraordinary food and stock a killer bar.
Chef Jorge Olvera’s menu transforms familiar comfort classics into extraordinary experiences through careful technique and an adventurous palate. Standout dishes that have defined Wishbone’s reputation include the prosciutto-wrapped shrimp with scampi sauce, brie baked in puff pastry with caramelized onion and candied apples, the bone-in pork chop with pineapple sriracha glaze and red pepper mashed potatoes, seared Alaskan halibut over hibiscus sauce with roasted corn and pickled beets, and Beef Wellington with filet mignon, sundried tomato butter, and wild mushrooms in puff pastry — a showstopping centerpiece that regulars describe as among the finest in Fort Worth. Weekend brunch brings Cowtown comfort with creative plating: short stacks, eggs Benedict, roasted beet salads, and a cocktail program of espresso martinis, Westside-mosas, and house Bloody Marys. The Amber Room — Fort Worth’s best-kept secret — is a speakeasy-style cocktail lounge tucked inside the restaurant, accessible through a large gold door dotted with mismatched door knobs or an unmarked wooden door on Bryan Avenue. Inside: exposed brick, retro lounge chairs, jewel-toned drapery, fine rugs, and a crafted cocktail menu spanning the Aztec Old Fashioned with chocolate bitters and rye to the Scarlett Letter with mezcal, Aperol, and green chartreuse — nominated Best Bar of the Year by the 2020 CultureMap Tastemaker Awards.
